In Saint Lucia, the local cuisine combines the sophistication of French cooking with zingy West Indian flavours. When dining out, look for langouste on the menu which is locally caught, spiny lobster that resides on the island's shores, cooked in a range of ways. You should also sample the national dish of green figs and saltfish which features unripe bananas and saltfish (typically cod) and is usually served with cabbage and pickled peppers.
